Chocolate Flax Mug Cake Recipe

  • 2 tbsps Erythritol
  • 1 Flax Egg 1 Tablespoon ground flaxseeds mixed with 3 tablespoons of water and left to sit until eggy.
  • 3 tbsps All-purpose flour
  • 3 tbsps almond milk
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp oil or melted butter
  • ½ tsp vanilla extract
  • 2 tbsps mini chocolate chips


  • Preheat your oven to 350°F
  • In a small bowl, mix together the dry ingredients (flour, erythritol, baking powder & soda).
  • Add in the wet ingredients (flax egg, milk, oil, and vanilla extract) until smooth. Note that adding in all of these things at once will create an eggy mixture; if you're not into that sort of thing then feel free to add them one by one until incorporated!
  • Pour batter into oven-safe greased mugs or ramekins (you can use muffin pans for this too!).
  • Bake for 30-40 minutes or until done in center--test by inserting a knife into the center; if it comes out clean then you're good to go! Remove from oven once finished cooking and allow to cool for 10 minutes before serving hot as an afternoon snack with some fresh blueberries on top!
  • Top with ice cream and Enjoy!
