Jackfruit rotini pasta recipe for the jackfruit lover
To a medium-sized pot on medium heat, bring about 3 cups of water to a boil.
Throw in your rotini pasta, 1 tsp of salt and 1 tablespoon of olive oil (to prevent sticking)
Cook for about 10-15 minutes or until rotini pasta softens up.
Heat up a saucepan on medium heat with about 2 tablespoons of olive oil
Throw in your chopped red onion and garlic: Fry until the redness of the onion starts to slowly fade off
Add in your spices (curry, thyme, pepper, salt, chicken cubes) and combine.
Add your jackfruit to the mix and cook for about 15 minutes or until the jackfruit breaks up into pulled pork form.
Add in your tomato sauce, soy sauce, vegetable stock, coconut milk, and stir.
Leave to simmer for about 10 minutes, stirring occasionally to avoid burning.
Add in cooked rotini into the sauce and combine thoroughly.
Serve and enjoy!
