This is literally the best vegan rice recipe you can prepare at home
Thoroughly wash your rice to get rid of any starch (basically until the water used to wash the rice becomes clear)
To your rice cooker, add in your washed rice, salt and water. Cook until done, then set aside.
Heat up your olive oil in a pot on medium heat.
Throw in your diced red onions and chopped garlic. Stir until the redness in the onion starts to fade
Add in your spices: ground pepper, curry, oregano, ground ginger and salt. Combine for about a minute.
Add in your diced tomatoes, diced sweet potatoes, diced plantains, corn, vegetable stock, soy sauce and lemon juice. Combine and cover to cook for about 15 minutes or until the sweet potatoes are softened.
Add in precooked rice and combine.
Serve and enjoy!
If you don't have a rice cooker, simply boil your water in a pot on medium heat and add in your washed rice and salt. Then cook until done (when rice is soft) and set aside.
