Vegan homemade pizza that's perfect for veganuary
To a medium sized bowl, add in all your dough ingredients and knead until smooth and soft.
Transfer dough to a greased bowl. Cover bowl and leave to rise for 1 hour in a warm location
Punch down dough and mold into a rose-flower shape. Feel free to use a pizza pan to form a circular shape.
Combine the tomato sauce, soy sauce, ground red pepper, veggie stock, oregano and salt; spread over crust.
Top with pre-cooked mushrooms, corn, green onions, red onions and mashed sweet potatoes.
Bake at 425°F for 15-20 minutes or until crust is lightly browned

For your toppings, feel free to use as much or as little as you prefer. Be sure to cook your mushrooms and sweet potatoes in advanced before topping it.
